Here is my “go to” simple berry dessert. There are so many ways to use berries in pies, cakes, scones, muffins, etc. But, this simply stands on its own and, maybe is my favorite:
BERRIES WITH FRESH MASCARPONE CREAM:
1/2 pint each fresh raspberries, blueberries, blackberries
1 pint fresh strawberries, peak ripeness, sliced
Mix berries in a medium bowl. Make mascarpone cream.
Mascarpone Cream:
12 oz. mascarpone
1/2 cup heavy cream
1/3 cup sugar
zest of one lemon
In a medium bowl, beat mascarpone until smooth. Add heavy cream and blend. Add sugar and lemon zest and blend until smooth and creamy. Dollop onto fresh berries and serve.
As the season really comes into its own, I will share a lot of fruit centric recipes. I love to cook and bake with fruit. Ryan’s favorite pie is Peach-Blueberry. Can’t wait for those peaches!!!!! Another great go-to recipe is Ina Garten’s Blueberry Crumb Cake. I love this cake – you can substitute any berries or mix them.
Here is a little sketch I made awhile ago of the Guy Wolff pots and floral centerpieces from my sister-in-law Patty’s wedding. Also, shots of roses and dahlias from yesterday. Can you tell this is my time of year???? Today is the perfect day for being outside all day. Bye-bye!!!!
