You could spend all day perusing different recipes, just for Roast Chicken, right? There are a million out there. Then there is the even broader spectrum of chicken recipes. Ryan and I had a discussion about this yesterday in an effort to pinpoint what was for dinner. We agreed that we’re a little bored with the Chicken/tomato combination right now. As chicken is such an incredibly versatile main ingredient, I went looking to illustrate this point. Chicken with herbs, nuts, fruits, vegetables, cheese, and on and on……
Here is a quick sampling of recipes without tomatoes. Round 2 – second 10 (no, 11) of 90 recipes :

CHICKEN WITH TARRAGON CREAM SAUCE – from Earl Peyroux (have loved this recipe since 1987)
8 boneless chicken breast halves
3 tblsp butter
1 tblsp olive oil
1/3 cup brandy
1 cup chicken broth
1 cup heavy cream
2 tsp fresh tarragon- chiffonade
salt and pepper
6 green onions, chopped
1 orange, sliced
Heat a large saute pan over medium heat with butter and oil. Season chicken breasts with salt and pepper. Cook 5 minutes on each side and turn heat down. Remove chicken from pan. Add green onion and saute in drippings. Deglaze pan with the brandy – light and let flame die down. Add 1 cup chicken broth and tarragon, stir. Add heavy cream and cook until thick. Place chicken on bed of saffron rice and surround with orange slices. Spoon cream sauce over chicken and serve extra sauce on side.
This is a luscious and enduring recipe. Adjust the amount of tarragon to your taste.
