The heat this Summer has hit me hard and I’ve been draggin’ my “Buns” around for the last few weeks. Everything has seemed like some great effort – not my usual demeanor. I was even beginning to wonder if I didn’t like cold weather better than hot! What?? Yikes, that’s scary! So, you can imagine how I was surprised and elated when I awoke this morning and checked the weather here. 59F! I was, what? WOW! – this is great, perfect! Knowing it was this cool and clear instantly invigorated me. I immediately turned off the AC and opened the windows! Next steps after coffee? To the oven!
Here’s what just came out! –
THE BLUEBERRY-BANANA SCONE
2 1/4 cups all purpose flour
1/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp freshly grated nutmeg
zest of 1/2 orange
1 egg
1/4 cup buttermilk
1/2 cup non fat greek yogurt
1/2 tsp vanilla extract
1/3 cup mashed banana
1 cup blueberries
muscavado sugar for dusting
Preheat oven to 350F.
In bowl of food processor, pulse together flour, sugar, baking powder, baking soda, salt, nutmeg and orange zest. Add cubed butter and pulse until mixture resembles coarse meal. Turn out into low, wide-mouthed bowl. Make well in center.
In a measuring cup whisk together yogurt, buttermilk, egg, vanilla and banana. Pour into center of flour mixture. With a dough scraper, combine ingredients just until they come together. Add blueberries and combine lightly. Spoon onto a baking sheet lined with parchment paper. Sprinkle with muscavado sugar and bake for 15-20 minutes or until browned and crusty on top.
Makes 9 scones.
With finally some “nice” Summer weather, I’m hoping to refresh and re-charge my batteries. After I take “Miss Kit” for a walk, I’m off to read my new great book about California’s Central Coast – The New Wine Country Cookbook, by Brigit Binns. Just reading her introduction makes me want to pack my bags immediately. Her description of Paso Robles is truly heartwarming and sounds perfect for me! But, since today is nice here, I’ll wait a little………
