It’s just that kind of day today isn’t it? I felt like making something warm and toasty with pumpkin. Here are my pumpkin-cinnamon scones made fresh for Christin today:
PUMPKIN-CINNAMON SCONES – adapted from King Arthur Flour
2 3/4 cups all purpose flour
1/3 cup sugar
1 tblsp baking powder
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp freshly ground nutmeg
1/4 tsp allspice
1/4 tsp ground ginger
2 eggs, room temp
3/8 cup buttermilk,
2/3 cups canned pumpkin puree
1 stick unsalted butter, cold,cut into cubes
2/3 cups chocolate chips, nuts or crystalized ginger, chopped cinnamon sugar for rolling
In bowl of food processor, whir together flour, sugar, salt, baking powder and spices*. Add cubed butter and pulse till mixture resembles coarse meal.
Turn out mixture into a low, wide bowl, Make a well in the center. In a small bowl, whisk together the eggs, pumpkin and buttermilk.
Pour this mixture into the center and gently mix with a dough scraper until the mixture begins to come together. Use your hands to finish if desired.
Add the chocolate chips (or nuts or crystallized ginger)**and mix. With a large spoon, scoop into 9 scones and roll in cinnamon sugar.
Bake for 22 minutes or until firm, dry-topped and crusty.
*IT’S A REALLY GOOD TIME TO THROW OUT YOUR OLD SPICES AND GET NEW ONES – IN TIME FOR STARTING YOUR HOLIDAY BAKING!
** today I made these with chocolate chips – but I really think I’d prefer them with toasted pecans; Christin wanted CCs though)
Christin gives the big thumbs up – said they were excellent! I’d have to agree. I’d say they are highly fragrant, light and crunchy with just the right amount of warm spice. And yes, I ate one and gave the rest away!
