EXTRA! EXTRA! READ ALL ABOUT IT – STRAWBERRIES COME INTO MARKET RIGHT UNDER MY NOSE AND I MISSED THEM!!!!!
Well, after I ventured into Union Square yesterday hoping to find some South Jersey Strawberries, I found these right around the corner this morning!
this recipe comes from The New Greenmarket Cookbook by Gabrielle Langholtz – THE new cookbook of the NYC Greenmarket – aka Union Square et al!!!! Check it out – some great recipes!
Rhubarb Compote with Sliced Strawberries from Pichet Ong
3-4 medium stalks Rhubarb, trimmed and cut into 1/4″ dice (2 cups)
3 tblsp sugar 1 vanilla bean, split, scraped and halved crosswise
1 tblsp lemon juice, from about 1/2 lemon
1/2 cup sliced strawberries
Combine all the ingredients except the strawberries in a small saucepan and let sit for 20 minutes to macerate. Cook over low heat until the rhubarb is soft, about 7 minutes. Remove from heat and let cool. Once cool, add the sliced strawberries.
I am thinking that this is a better filling for yesterday’s cake – especially when the Strawberries come in, than the one I used. I will note it there. You should at least double this recipe when making it for the cake.
Abraham Darby by David Austin – a real beauty this am!
