Here is my favorite summertime gluten-free lunch. It’s simple, fast and satisfying! Two of these is the perfect portion for a hungry girl like me! And, it’s rather sinfully delicious!
2 large organic romaine leaves, washed and dried
4 slices low-sodium turkey breast, high quality
4 thin slices heirloom tomatoes
4 ultra thin slices red onion
one half ripe avocado, sliced into thin slices
2 slices bacon, crisp, crumbled
4 large basil leaves, cut into chiffonade or homemade basil pesto
mayonnaise – a few dabs here and there (you can sub a light drizzle your fav homemade vinaigrette)
salt and pepper to taste
Lay the dried lettuce leaves onto a large plate. Place turkey slices over to cover. Place tomato, onion, avocado slices down the runway as shown above. Sprinkle the crumbled bacon over all. Dot with mayonnaise or basil pesto if using. Sprinkle with salt and pepper. Working from wide end, roll up and skewer with toothpicks. If yours don’t roll up perfectly, don’t worry – they won’t last long! Enjoy!
