Well, we got our little snowstorm now, didn’t we? All those who have been anxiously awaiting a big hit have gotten their wish. It’s also a good day to thank Robert Frost, once again for those lovely words, “of easy wind and downy flake.” Only today’s episode doesn’t seem to be of “easy” wind.
I did some basic planning yesterday, finishing up my next article for Intermezzo and stopping in at the grocery store to get a few things for today. My daughter caught one of the last flights out to Miami and my son hunkered down in NYC to wait for a delivery, um, ok…….
Me? Well, you know where I headed – straight into the kitchen after a 6am little shoveling for Kit to make her way outside. I just love being outside before the sun comes up, come rain, (well,not rain) shine or snow.
Here’s my first project of the day:
BLUEBERRY CORN MUFFINS with Ricotta -adapted from Smitten Kitchen
2 cups organic corn meal
1 cup all purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/4 tsp fine sea salt
3 tablespoons orange blossom honey (Tremblay Apiaries)
2 eggs
1 1/4 cups whole milk
1/2 cup sour cream
1/2 cup whole milk or part skim ricotta cheese
8 tablespoons unsalted butter, melted and cooled
one pint fresh blueberries
muscavado sugar
Preheat oven to 425F. Line muffin tins with paper liners (14).
In a medium bowl, whisk together 1 1/2 cups of the corn meal, the flour, baking powder, baking soda and salt.
In a large bowl whisk together the milk and remaining 1/2 cup corn meal. Microwave for 1.5 minutes. Whisk to stir. Microwave on 30 second intervals, whisking after each until the mixture becomes a thick porridge consistency that clears the bottom of the bowl when the whisk is pulled through the batter. Whisk in the cooled butter, then the honey. When cool enough so as not to scramble the eggs, add the eggs and whisk in. Fold in dry ingredients and then the blueberries. Scoop with an ice cream scoop into prepared pan and sprinkle with muscavado sugar. Bake 15-18 minutes or until well browned and firm to the touch. Serve with sweet butter or a drizzle of best honey.
