This recipe is easy, quick and just what you might need for a mid-morning snack today.
Baked Pumpkin Spice Donuts – adapted from Live Well Bake Often (only makes 6, so double if desired)
1 cup all purpose flour
1/8 cup whole wheat flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp freshly grated nutmeg
1/8 tsp ground cloves
1/4 tsp salt
1/4 cup buttermilk
1 egg – ex lg
1/2 tsp vanilla
1/2 tsp orange zest
1/3 cup pumpkin purée
1/3 cup light brown sugar
1 tbsp melted butter
Cinnamon/Nutmeg Sugar – 1/3 cup granulated sugar mixed together with 1/2 tsp cinnamon (or more) and 1/4 cup freshly grated nutmeg
Preheat oven to 350F. Spray a donut pan lightly with grapeseed oil and set aside.
In a large bowl, whisk together the flours, baking powder, salt and spices. In a medium bowl, whisk together the egg, buttermilk, vanilla, pumpkin, orange zest and sugar.
Mix wet ingredients into dry only until dry disappear. Spoon into pan. Smooth with an offset spatula. Bake 11 minutes. Turn oven off. Remove from pan onto a cooling rack. Return to oven for 2 minutes.
Brush donuts lightly with melted butter. Dip into Cinnamon/Nutmeg/Sugar mixture. Enjoy warm with a cup of hot mulled cider. 🙂
