Today is a glorious day for the NYC Marathon. And, my daughter, Christin is running in it for the first time for the Robin Hood Foundation. We’re all very proud of her determination, training and effort. Go Christin!
Christin, who I affectionately called “Honey Bun” when she was little (among other things, like Bunny-Bun) loves the Lavender Goat Cheese from the Union Square Farmer’s Market. I thought I’d make her a scone to eat when she comes in off the course.
in honor of Christin Hanley’s NYC Marathon run
THE HONEY BUN SCONE WITH GOAT CHEESE AND LAVENDER –
3 cups all purpose flour
1 tbsp baking powder
1/4 cup sugar
1/2 tsp salt
zest of 1 lemon
8 tbsp unsalted butter, cold, cut into cubes
2 eggs
1/2 cup buttermilk
1/2 tsp almond extract
1 tbsp plain greek yogurt
2 oz goat cheese, crumbled
3 tbsp honey
1/4 cup coarsely ground almonds
1 tbsp sugar combined with 1 tbsp organic lavender and 1 tsp lemon zest

Preheat oven to 425F. Line a baking sheet with parchment paper. Set aside.
In the bowl of your food processor, whir together the flour, baking powder, salt, sugar and lemon zest. Add the butter cubes and pulse 8-9 times until the butter resembles the size of small peas. Dump this mixture into a low wide bowl and make a well in the center.
In a measuring cup, whisk together the buttermilk, eggs, almond extract, yogurt and goat cheese. Dump this mixture into the center of the dry ingredients. Working with a dough scraper, gently pull the dry ingredients into the wet, mixing just until the dough begins to hold together. Finish kneading with your hands and pat out onto a lightly floured surface.
Roll into a rectangle about 10″ x 7″. Spread the honey out onto the rectangle. Spread with a small offset spatula. Sprinkle the ground almonds over. Roll into a log. Cut the log into 8-9 scones. Place on the prepared pan. Brush with egg wash. Sprinkle the lavender/sugar/lemon mixture lightly over the top.
Bake for 20 minutes or until nicely browned and firm to the touch. Remove from the oven and cool on a wire rack. Enjoy!
